Tofu & Broccoli Noods

Ingredients

  • 1 pack of Vegan White Miso Vite Ramen

  • 1 package extra firm tofu

  • 1 head of fresh broccoli

  • Handful of scallions

  • 1 baby bok choy

  • 1 tsp toasted sesame oil

  • 1 tsp soy sauce

  • Salt & pepper to taste

Instructions

  1. Finely dice up the garlic and add a pot of boiling water. Let it boil for a few minutes.

  2. Dice tofu into small cubes.

  3. Cut up the fresh broccoli & scallions.

  4. Add noodles to the pot of boiling water and cook as instructed on package.

  5. Mix in soy sauce, sesame oil, salt and pepper to taste.

  6. Once noodles are cooked, add broccoli, Noodtrient flavor packet , bok choy & tofu to noodles.

  7. Simmer broth until veggies are softened.

  8. Serve in a bowl with broth.

  9. Top with scallions.

  10. Serve and enjoy!
